Healthy Gluten Free Strawberry Oatmeal Cookies


What You Need

  • 1 cup strawberries hulled and thinly sliced

  • 2/3 cup nonfat Greek yogurt

  • 1/2 tsp lemon extract or vanilla

  • 1 egg white

  • 1/3 cup unsweetened applesauce

  • 1/3 cup coconut sugar

  • 1 cup Gluten Free oat flour

  • 1/4 cup Gluten Free Rolled Oats

  • 1/2 tsp baking powder

  • 1/2 tsp baking soda

  • 1/4 tsp salt


Whip It Up

  1. Heat the oven to 375 F. Prepare a baking sheet with parchment paper.

  2. In a blender or food processor, combine egg white, applesauce, lemon juice, Greek yogurt, salt, baking powder, baking soda, coconut sugar and oat flour.

  3. Blend until ingredients are fully combined then transfer the dough to a mixing bowl and carefully fold in the strawberries and oats.

  4. Use a small ice cream scoop to drop ~2 tbsp of batter onto the prepared baking sheet.

  5. Bake 10 minutes until the edges of the cookies are just beginning to brown.

  6. Remove from the oven, transfer to a wire rack to cool completely.
